**Roasted Sweet Potato & Apple Hash*
Ingredients:
* 2 medium sweet potatoes, peeled & diced
* 1 apple (Fuji or Honeycrisp), cored & diced
* 1 small red onion, chopped
* 1 tbsp olive oil
* 1 tsp ground cinnamon
* 1/2 tsp nutmeg
* Pinch of salt & pepper

Instructions:
